When it comes to summer entertaining I want full flavors treats that are easy to assemble, but can feed a crowd. Big pitchers of Sangria and margaritas are my go-to cocktail options. A fiery salsa, homemade chips plus these fruit cups make for a colorful table plus with the summer heat something fresh, juicy and cool is always welcomed.

Crunchy jicama is peeled, sliced and paired with juicy pineapple, refreshing cucumber all sliced to match the jicama. A drizzle of lime juice, a sprinkle of chile power and your all set to serve. My guests love these fruit cups, so much I find myself making a double batch. Fruit cups and cocktails, you can’t go wrong.

Jicama, Cucumber & Pineapple Fruit Cups with Chile & Lime

Ingredients
  • 1 jicama peeled and cut into medium thick matchsticks
  • 2 cucumbers peeled and sliced into thick matchstick
  • 1 pineapple peeled, cored and cut into spears
  • Limes sliced into wedges
  • Chile powder such a tajín
Instructions
  1. Divide fruit evenly into cups or small plates, have guests squeeze lime wedge over fruit and sprinkle with chile powder.
