Prickly Pear Champagne Punch

A perfectly festive Prickly Pear Champagne Punch is great for toasting the New Year! This prickly pear champagne punch looks absolutely stunning in a punch bowl and requires only 4 ingredients.

I like to prepare the syrup in advance and allow it to chill in the fridge with my champagne. Served up punch bowl style allows your guests to serve themselves and you a stress free evening.

Prickly Pear Champagne Punch

Ingredients
  • 10 prickly pears peeled and diced
  • Zest and juice from 4 limes
  • ¼ cup agave
  • 2 cups water
  • 1 bottle chilled champagne
  • Lime wedges for garnish
Instructions
  1. Place prickly pears, lime zest plus juice, agave and water into blender. Blend until smooth. Strain, taste and adjust sweetness if needed. Place prickly pear syrup in punch bowl, top with chilled champagne and serve garnished with lime wedges.
