Pumpkin Pie Ice Cream Sandwiches

Is it too soon to talk leftovers? 

With the entire family heading over to my house this year I know I’ll have a load of leftovers in the fridge.  I’m making a double batch of pumpkin bars, pumpkin empanadas and a pumpkin cooler, so I’ve stocked up on pumpkin.  After a day of stuffing our self silly, with the kids out of school and our plan to spend a few days vegging on the couch watching movies I knew pumpkin pie ice cream was the sweetest way to use up all my leftovers.

Then I spotted a few rolls of galletas Marias and took one step further and made ice cream sandwiches.  Creamy pumpkin pie ice cream held together by one of my favorite child-hood cookies. 

Sweet.

Pumpkin Pie Ice Cream Sandwiches

Sándwiches de Helado Pastel de Calabaza

Ingredients
  • galletas Maria
  • 3 tazas de helado de vainilla bajo en grasa
  • 1/4 taza de puré de calabaza lata
  • 1/2 cucharadita de canela molida
  • 1/8 cucharadita de jengibre molido
  • 6 cucharadas congelados reducido en calorías crema batida descongelada
Instructions
  1. Coloque las galletas helado, puré de calabaza, canela, jengibre y crema batida en un tazón grande; puré suavemente con un machacador de papas hasta que estén combinados. Para cada sándwich, cuchara aproximadamente 1 cucharada de crema de hielo sobre el fondo de 1 galleta. Cubrir con la segunda galleta, lado inferior hacia abajo, presionar juntos suavemente. Envolver rápidamente cada sándwich en papel plástico. Congele aproximadamente 3 horas o hasta que esté firme. Para un almacenamiento más largo, colocar bocadillos envueltos en bolsas de plástico congelador con cierre. Deje reposar 10 minutos antes de servir.
