Skillet Chicken Fajita Rice is a one pan dinner delight. Chicken, rice, bell pepper and onion seasoned with cumin, oregano and lime juice ready in under 30 minutes is my idea of the perfect meal.

I mean c’mon I’m a Texas gal
Y’all know nothing makes us happier than a pile of sizzling fajitas, served with plenty of salsa, guacamole and warm tortillas.
Pero on a busy day when I crave fajitas, I turn to this quick and easy skillet chicken fajita rice.
Ready in under 30 minutes, one pan, from oven to dinner table – yes please.
A quick sauté of ingredients on the stove top, covered with foil and popped into a preheated oven for 20 minute gives me plenty of time to reheat beans that I have stashed in the fridge, warm tortillas, slice up a few avocados or hell even whip up a few margaritas.
Served family style, this meal is legit a life saver during a busy week, but also perfect for entertaining.
INGREDIENTS NEEDED TO MAKE SKILLET CHICKEN FAJITA RICE
Oven safe skillet or cast-iron skillet
olive oil
boneless chicken breasts, sliced
ground pepper
salt
cumin
oregano
onion, sliced – yellow or white
green bell pepper, sliced – red, yellow or orange
red bell pepper, sliced – same as above
lime juice
white rice, I personally have not tested this recipe with brown
water
foil
Fresh cilantro, washed and chopped
Optional for serving: avocado, sour cream, shredded cheese, tortillas, salsa.
HOW TO MAKE SKILLET CHICKEN FAJITA RICE
Preheat oven to 350 degrees.
In a cast iron skillet or oven safe skillet heat oil over medium-high heat.
Add chicken, sauté until browned on both sides, about 2-3 minutes.
Season with pepper, salt, cumin, and oregano, stir to combine.
Add onions, peppers, lime juice, stir continue cooking for 5 minutes.
Add rice and water, stir to combine.
Carefully cover skillet with foil, place in oven for 20 minutes.
Carefully remove from oven, remove foil, and serve warm garnished with cilantro.
