Tipsy Carrot Gin Cocktail
I’m in the midst of prepping for Easter. I need to finish filling the plastic decorative eggs with candy, bake a cake and make more cascarones.
There is confetti everywhere – send help.
Easter snuck up on me this year, but I cannot complain the weather is gorgeous, the family is excited and there are dozens and dozens of eggs to hide.
Before I head into the kitchen I want to share with you what I am currently sipping on. I spotted this tipsy carrot cocktail in the Rachael ray magazine and instantly made a mental note to save a few carrots from this weeks grocery haul.
The bright carrot hue makes me happy. Just look at that color!
Off to finish my Easter prep with this iced carrot cooler in hand – I’ll be fine, don’t worry about sending help.
- 2 cups carrot juice
- 2 cups ginger ale
- 1/4 cup gin
- 1/4 cup fresh lime juice
- 4 teaspoons fresh grated ginger
- 4 small carrots tops trimmed and peeled
- In large pitcher, mix first 5 ingredients. Divide among 4 ice-filled glasses. Garnish with small carrots.
