Bad Blogger and working with what ya got…..

The cast..rice,tomatoes,mozzarella and olives

Hello..anyone out there?? I knowI know I am a horrible blogger…but my mom was in town and I needed mommy time..understand??Okay let’s move on..    

My mom left yesterday and I quickly realized my house had slowly slipped into a wasteland of dirty laundry, dusty corners and bathrooms that seriously needed some TLC, so I spent yesterday tidying up and catching up on some major homework…please please let this semester end soon..I am so done!!    

Well this morning I feed my girls’ their breakfast and suddenly realized I had not made it to the store…aw man!!  I stood in front of my bare cabinets shed some tears, laughed like a fool, pulled what I had and made dinner. This is a EASY I mean EASY dinner cook some rice, throw in what ya got, dress it up with some olive oil, lemon juice, salt and pepper and chow baby chow…

 My daughter was a doll and modeled for me, I went to ask my five year old if she wanted to srike a pose and I found this….omg…Love my 5yr old!!    

The Olive Monster

Feel free to add whatever you have on hand..chicken chunks, tuna, ham, sweet potatoes, corn,grapes,spinach…the possibilities are endless…Enjoy!!    

 This is what I had on hand brown rice, almost dead olives, baby tomatoes, and fresh mozzarella..

    Ohmigosh, I love this post. Mostly because your daugher is SUCH a sweetie…and I’m only looking at her chubby little adorable fingers! Hee hee!
    guess despite the initial tears, I love the way you just laughed, shrugged, and…whipped up something amazing!

    This is something that my housemate loves to make. Whenever she makes dinner, she likes to throw in some raw rice in the rice cooker, then toss in random things in there as well, so it becomes some goopy rice-y comfort food. One time, she tossed in some leftover beef stew, and it was such a savoury dish.

    I like how your’s, however simple, it still looks so nice and fancy. Especially with that fork in it.

    Momtime is way more important than irrelevant things like cleaning.

    I used to do that with black olives all the time! Which is why they all ended up in my belly instead of in the salad. Ha!

    You are not a bad blogger by any means! Both of my kids (4 & 6) are on spring break, plus lots of guests over last weekend… I understand completely. Some nights, I am lucky if I get the dinner on the table by 9:30 – 10:00. I love the Olive Monster photo! My daughters love to grab the camera and take pictures with me… only problem is that they dropped my last camera, so I have to be cautious! Good luck!

    i have been eating more brown rice lately, too. it’s actually not as bad as people think it is! that’s good that you incorporate that into your kids meals too!

    amazing how guilty we feel when we leave our cyber friends hanging….you are forgiven, but just this once. Olive monster is cute…this dinner would classify as “food”…when my kids ask what’s for dinner and I don’t what it is, I call it “food”.

    It is so nice to be able to spend that time with mom’s. I love the photo of the olive hands…how darling! The risotto looks amazing. I am such a huge fan of risottos and would love to try this one.

    I love the olive monster…many memories there! Sometimes the best dishes come out of the bare cupboard syndrome. Glad you got yours posted, I always forget mine! What a great post and the end result looked pretty tasty! Besides the meal was supported by the important ingredients–kids, family and lots of smiles.

    You did great with what you had on hand. Lord knows we have all been in that position of just staring into the refrigerator and cabinets.

    Dahling Bonnie – There is light at the end of the tunnel as end of semester nears 🙂

    And you are an awesome mom who did a wonderful thing by fixing a healthy dinner from scratch…plus look how much fun your daughter had!

    I am thrilled that for a few days you got be a daughter too instead of just being Mom. Excellent….now that your batteries are charged, it’s back on the grind mill as your eager audience awaits 🙂

    We all need family time 🙂 That is where i disappeared to this past week too… there and the pile of law books.

    You had no pasta in the cupboard? That looks like it would have been an awesome pasta dish… or with orzo 🙂

    I think this dish looks great. Sometimes the simplest is the most tasty, non?
    And your Olive Monster Hands is reminiscent of the scene where Amelie has all the raspberries on her fingers and subsequently eats them all in the opening sequence.
