I was recently invited to be a Verizon Ambassador and share..share..share pictures of my day when I wasn’t in the kitchen as a food blogger. At first I was kinda freaked out at sharing a bit of what I do during the day. There are days I tend to fall a little off my schedule and eat breakfast all day, shop online in my pj’s and spend my evenings watching cooking shows. Then I thought why not? It could be fun. You would know a few of my dark secrets, (pic19). So let’s get started. A few pics a few words…. Read More
Zucchini Fries with Tequila-Spiked Avocado Dip
Zucchini Fries with Tequila-Spiked Avocado Dip I love fries. Who doesn’t? Salty, hot, fries piled high, smothered in ketchup. This gal’s idea of a good time. Now try explaining this salty, hot pile of fries to your thighs, this is where it gets ugly. Thighs don’t understand, care or even bother to listen to my reasoning for wanting a salty, hot fresh pile of fries. I hate thighs. So to nix my craving I have turned to baked fries, yes they actually taste great. baked sweet potato fries baked carrot fries baked green bean fries baked… Read More
Celebrate National Tequila Day
Did you know tomorrow is National Tequila Day? Well of course you did, right? right? Can you tell I’m pretty stoked about the holiday, yup I love me some tequila. But hey, the holiday does fall on Tuesday and while sipping margaritas makes me SO happy I do need to keep some grip on my week. So instead I’ll cook with tequila tomorrow!! I’ll drizzle it over my salad, add it to my glaze for fajitas, swirl it into my pasta sauce, melt it with my queso and even spike a few cherries for dessert. Tequila, Tequila, te adoro! Happy Tequila Day!! Tequila Lime Dressing Tequila… Read More
Plum Pineapple Margarita
Plum Pineapple Margarita I’ve been hoarding plums from my kids. Isn’t that horrible? Tiny piles, stashed near the fridge, next to the basket of potatoes where I know they would never look. There I said it. Out loud. I’m a plum hoarder. The thing is I picked up a few plums at the grocery store last week. And they were SO juicy, plump and sweet I knew I just had to make a margarita. The next day they were ALL GONE. All of them, what? This happened three times over the course of the last week. KIDS! So late Sunday night… Read More
Jicama Corn Salsa
Jicama Corn Salsa I killed a mole recipe on Thursday; really I obliterated it to messy pulp. I sacrificed a juicy slice of watermelon for what I thought would be a lip smacking new margarita combo, total FAIL! I accidently placed my poblanos in the freezer and left the crema in my truck. Disgusting. Ya it’s been a winner of a week. Lucky me I have a double batch of this fresh salsa waiting for me in the fridge. Crisp mouthfuls of jicama, fresh corn and jalapeno help to jog my memory of last week’s torrid kitchen… Read More
Paletas de Pepino y Uva
Paletas de Pepino y Uva Over the weekend I made a HUGE pitcher of agua de pepino. With the all the hustle and bustle that comes from any great weekend the pitcher was slowly edged to the back of the fridge. On Sunday evening while making dinner I reached into the fridge for cilantro and noticed the pitcher of agua. A pitcher of agua go to waste in my kitchen, I think not. I pulled out my paleta mold, diced a few grapes and made paletas. They were good, so good, like crazy good. I should know… Read More
Mango Margarita Ice Cream
Mango Margarita Ice Cream I’m headed to the beach today. As I type mi carino is fighting with the pile of floats, buckets, shovels and gear my kids have left in the living room. Can you believe I live a 20 minutes drive from Port Aransas Beach and a 10 minute drive from Rockport Beach, its insane? Two dreamy locations loving offering their glory of salty, light blue waves, miles of sandy brown turf and hours upon hours of fun. One of the many, many blessings of moving home. Today we will splash in the waves, my kids will… Read More
