Easy Horchata Recipe
Horchata serves 6-7 6 tbsp rice 6 ounces (1 1/4) cups blanched almonds 1 inch cinnamon stick Three 2 inch strips of lime zest (colored rind only), 3/4 inch wide about 1 cup sugar Thoroughly pulverize the rice in a blender or spice grinder. Transfer to a medium- size bowl and add the almonds, cinnamon stick and lime zest. stir in 2 1/4 cups of hot tap water, cover and let stand at least 6 hours, or preferably, overnight. Hello dears, how was your weekend? Mine was F-A-N-T-A-S-T-I-C!!! Yup it was one of those weekends when there’s no commitments, no obligations, Nada I mean Nada. Those are rare around our house so we took complete advantage and just let loose, went with the flow and enjoyed each other’s company. On Friday we hit a bookstore that was going out of business, we arrived foaming at the mouth (well at least I did) and hit that store like there was no tomorrow.

I just returned from a quick trip to Corpus Christi, Texas where my big sis lives to celebrate my niece’s 8 bday.. I will find any excuse under the sun to stuff my mouth with chocolate. Yes– I am being totally and completely honest with you my fellow readers. I have no shame..I made this recipe only to make myself feel better in knowing that I would ingest my beloved chocolate. Pureed sweet potatoes are added to the mix making it healthier for you…as in another EXCUSE to love myself silly with chocolate….peace and goodnight…Enjoy!
