Avocado Fries
My little sister and I have a ritual. Our me time. To unwind, distress and take a break from our kids. She visits me every two weeks and we plan our little escape. Midnight movies. Have you been to the movies at midnight? Well, here in Edinburg, Texas it’s pretty empty (very) and that’s how we like it, because 99% of the time we watch girlie flicks. You know the kind your hubby would not be caught dead in, only when you were dating kind of movie. Yeah those, we love them! The sweet bonus of a midnight viewing is NO ONE is there to see you ball your eyes out. Yeah.. cause that’s what we do… we cry (we’re crybabies), we loudly – annoyingly laugh out loud, we eat double scoops of ice cream, gorge on popcorn and eat candy. It’s a blast!!
After the movie we sprint to the car. Because it’s 2am, it’s really dark and I’m a scardey cat. Then we go for a long, long drive. We drive, we talk, we laugh and yeah we cry. It’s all very cleansing. Sisterly cleansing.
When I spotted these fries on Joy the Baker’s new cookbook I knew immediately these would be the best pre-movie night snack. Delicate slices of ripe avocado dipped in panko and lightly fried until golden crisp. My little sis would love these fries with a splash of lemon and a drizzle of sriracha.
This is exactly why I adore Joy’s new cookbook. This is the cookbook you turn to for those moments.

Initially, I thought I would not have much in common with Joy, but she gets it, she really does. It’s the little things in life that we must celebrate. From time with friends to time with family and most importanly Midnight movies. Love it!

- 1 quart vegetable oil
- 2 medium ripe Hass avocados
- 2 large eggs
- 1/3 cup all-purpose flour
- ¼ tsp salt
- Pinch of cayenne pepper
- 1 ¼ cups panko bread crumbs
- Salt lemon, and cayenne pepper for sprinkling

Clip a fry thermometer onto a medium heavy bottomed saucepan and heat oil to 375 degrees F

While the oil heats, halve, peel, and slice the avocados into long spears; it’s okay if the size varies slightly.

In a small bowl, beat together eggs.

In a separate bowl, whisk together flour, salt, and cayenne pepper.

In a medium bowl, measure out panko crumbs.

Set out a clean plate for coated slices.

Preheat oven to 200 degrees F and prepare a pan with paper towels.

Keep an eye on your oil.

If it’s reached 375 degrees turn to low.

Using one hand and keeping the other hand clean, dip avocado slices in egg, lightly coat in flour mixture, and then coat in bread crumbs.

The fries don’t need a heavy coating-lightly coated is ideal.

Place on a plate until all avocado slices are dipped and ready for frying.

Using tongs, lower 6-8 avocado slices into the hot oil.

Fry until golden brown. Remove from oil and place on lined baking sheet.

Sprinkle with a bit of salt, and place in the oven to stay warm.

Bring the oil back up to 375 degrees before frying the next batch.

Continue frying until all avocado slices are golden brown.

Remove from the oven, sprinkle with a dash of cayenne pepper and fresh lemon juice.

Serve immediately.

What a great ritual, I only wish my sister lived closer to do something like that. However, I’ll be saving up some recipes for sharing, and this one sounds perfect.
These are the next thing I’m going to make from that book. Had them sticky noted from the very first. Glad to see someone else tried it and they look “doable”. Love you description of your sister cleansing ritual.

YUM. avocados are something i can eat raw and plain as can be, but frying them boosts them to extraordinary status!

What fun sister time! I wish I were close enough to my sister to have such periodic fun. We live so far apart that about every 2 years she flies into NM and we take a road trip across Texas to see our mom in Louisiana. With all that driving time we catchup on A LOT of stuff. 🙂 Thanks for introducing us to Joy’s cookbook with both the review and those wonderful fried avocados! This is super cool, I’m also a fan of Joy the Baker, so it’s neat to read your review. It’s nice to hear how close you are to your sister, my own sister is one of the few that I can be myself around. So loose that we both can be ugly and angry in front of each other and still love each other–avocado fries…great bonding moments to be had ;p
Excellent review…and you are so right. This is a book for special moments. The great thing is, the recipes are special but still do-able. Not over the top froo-froo affairs.

This is a great, heart-felt review of Joy’s book. I have to confess I never even noticed those avocado fries…I guess I was too focused on the sweets. You make them look positively decadent!
What a great post! There’s just nothing like a sister! My two daughters, 5 and 7, have a friend over right now (an only child). Literally while I was reading this post the friend asked my daughters if it’s “hard being sisters”. My 7-yr-old immediately said “yes”!! And I remember feeling the same way as a child although now I wouldn’t trade my sisters for anything!
Only one of my sister’s lives close enough to me to get together on a regular basis, and we like to sit on her porch after the kids go to bed and drink wine. Sometimes a little, sometimes a lot. But it’s always fun!! xoxoxo
