PEEPS® Crumbly Christmas Bars –  Barras de Avena para Navidad con PEEPS®    

 

Hello December!  I’m still in turkey mode and December is here -WOW!  Today I plan to lug all my Christmas decorations out of the garage, head out to buy a tree and slowly begin the process of untangling all those pesky Christmas lights – ugh.  But first I’m baking up a double batch of these crumbly oatmeal bars bursting with PEEPS®.

When PEEPS® contacted me to create a Holiday recipe for their Advent Calendar, which will feature daily crafts and recipes to spread Christmas cheer I knew I had to spruce up my oatmeal bars.  I added a layer of peeps between the crust and topping; baked until golden, sliced and served warm with a tall glass of milk.

I plan to use these festive bars to encourage- motivate everyone to help me decorate for the Holidays.

Ingredients
  • ½ cup flour
  • ¼ cup light brown sugar packed
  • 6 tbsp of butter cold
  • ¼ tsp baking soda
  • ½ tsp salt
  • 2 cups rolled oats
  • 1 cup semisweet chocolate chips
  • 2 pkgs of PEEPS® 9 count each (I used PEEPS® Trees and PEEPS® Snowmen)
Instructions
  1. Preheat oven to 350. Grease an 8x8 pan. Set aside.
  2. To a large mixing bowl combine flour, brown sugar, baking soda, salt and rolled oats.
  3. Add butter and with two knives cut butter into dry ingredients until mixture is crumbly.
  4. Press a little more than half of this mixture into the bottom of the prepared pan.
  5. Sprinkle the chocolate chips evenly over the cooled crust. Top with the Peeps, making 3 rows of 5 PEEPS®.
  6. Sprinkle the remaining mixture over PEEPS®.
  7. Bake for 20 minutes; cool for 10 minutes and serve.

      Hi Beth ~ I cannot belieive I left the butter out, 6 tsbps. Thank you for spotting that mistake.
