Pozole Verde

We begin every New Year with a big comforting bowl of pozole in my family.  Every year while we kids were out popping firecrackers, lighting sparklers and gearing up for midnight my mom was inside prepping her pozole; that would slowly simmer away all night. The clock would strike midnight, the 12 grapes were quickly devoured, hugs, kisses and well wishes were shared and off to bed we were sent.

The next day we would gather around the kitchen table and watch her ladle bowls of steamy pozole for the family. We were now prepared to tackle a New Year fully armed with a belly full of warm pozole. 

 

That was ages ago, but some things never change.

 

And why should they?

 

With a belly full of warm pozole one is unstoppable, here’s to an Amazing 2014!

Ingredients
  • 1 libra de tomatillos
  • 6 tazas de caldo de pollo
  • 2 tazas de cebolla picada
  • 3 libras mitades de pechuga de pollo sin piel
  • 4 dientes de ajo picados
  • 2 chiles jalapeños sin semillas y en cuartos
  • 1 30 onzas de granos de maíz blanco, escurridos
  • 1 cucharadita de sal
  • 1/2 taza de cilantro fresco picado
  • 1/4 taza de grasa reducida crema agria
  • limónes
Instructions
  1. Deseche las cáscaras y tallos de los tomatillos. Cocine los tomatillos enteros en agua hirviendo 10 minutos o hasta que estén tiernos y escurrir. Coloque los tomatillos en una licuadora; procesa hasta que quede suave, hago a un lado.
  2. Coloque los 5 ingredientes siguientes (caldo a maíz) en una olla grande, ponga a hervir. Tape, reduzca el fuego y cocine a fuego lento 35 minutos o hasta que el pollo esté cocido. Retire el pollo de los huesos y despedaz. Añada el puré de tomatillo y la sal y cocine durante 5 minutos o hasta que se caliente. Añada el pollo, y servir con cilantro, crema agria, y limones.
