Dulce de Leche Chocolate Chip Cookies Mi carino has been in Waco, Texas for the last two months. My weekends have evolved into an overdose of girl time. There have been countless tea parties, breakfast for every meal, glam make-up sessions and way too many fruity drinks laced with colorful straws. Have I missed mi carino? With every ounce of my heart, but we needed this, rewind truthfully I needed this. My girls are quickly growing up, blooming into little ladies and transforming right before my eyes. So when hubby announced he would be leaving us. I silently shrieked with… Read More
Café con Leche
Café con Leche I got my first job when I was 16 at our local Whataburger. I started off taking orders, was then moved to man the drive thru and ended up behind the grill. And I stayed there, because this 16 yr old could grill a mean burger. I used to work the 5pm-3am shift on Fridays and Saturdays. The crowd was insane. The hours flew by with the football game crowd, people out on dates, friends hanging out, the bar crowd and the people getting off the night shift. These are the days I didn’t mind working…. Pozole Rojo
Pozole Rojo is a flavorful Mexican stew made of pork, ancho chiles, and hominy. Served up steamy alongside a table of toppings this stew is pure comfort. Pardon the interruption, but I had a bit of pesky technical issues. I still have a few loose ends to tie up, but wanted to share a big bowl of comfort with you today. This is New Year’s Day fare, what our family enjoys year after year. To this day I have yet to perfect my mom’s recipe. My mom has this way of making the simplest dishes… Read More
Empanadas de Dulce de Leche y Queso
Empanadas de Dulce de Leche y Queso We are ending the year on a sweet note with a wonderful Giveaway from IMUSA. Wishing you a HAPPY, PROSPEROUS and TASTY New Year!!! I was recently sent the new IMUSA empanada maker to test out. I have to admit at first I was skeptical. Four empanadas baked and ready to go in under 15 minutes, really? I am so accustomed to making, rolling, stuffing and baking pan after pan of empanadas. In my house if you’re going to make empanadas, you’re going to make enough for your hermana, tu Tia, la… Read More
Sparkling Citrus Margaritas
Sparkling Citrus Margaritas I’m ringing in the New Year with a fun twist on the Margarita. Last year I created a margarita from our family tradition of las doce uvas, but this year I’m vamping up my margarita with a bit of the bubbly. A hint of fresh citrus, a touch of sweetness, topped off with champagne and you’re ready to ring in the New Year. Here’s to ringing in 2013 in style. Enjoy! There’s nothing like ringing in the New Year with a little bubbly

Creamy Pineapple & Coconut Empanadas One last sweet treat (and giveaway) before my family arrives for the Holidays. Creamy empanadas stuffed with pineapple and coconut baked until crisp. The recipe is from Ericka of Nibbles and Feast. I enjoyed them so much I made them for my tamalada fiesta. My sister hid them for herself and papi ate 4 in one evening. That pretty much sums this empanada up. Tasty! I did manage to save a few for mi carino and he has been nibbling on them with his morning coffee. Wishing you a Merry Christmas! Avocado Tomatillo Salsa
Avocado Tomatillo Salsa The Posadas are in full swing and we are gearing up for a complete week of celebrations. Las Posadas begin on December 16 and end on Christmas Eve with the Cena of La Noche Buena. This celebration reenacts Mary and Joseph’s search for shelter in Bethlehem. These processions of los peregrinos lead to a different house every night for the culmination of the posada – a fiesta. This wonderful Mexican Christmas tradition is one my kids look forward to. They love the hearing the Mariachi’s sing traditional Christmas songs. They play with their cousins while the adults… Read More
