Chalupas

Chalupas Growing up one of my favorite games to play was Lotería.   Similar to bingo this game used picture cards instead of numbers. There is 54 character cards total in the game like: El cazo (ladle) El mundo (world) El apache (apache) El alacrán (scorpion) El nopal (cactus) My favorite card was La Chalupa (boat, canoe). A beautiful lady seated in a chalupa over bright blue water, her canoe filled with baskets of fruit, vegetables and flowers. I love to imagine her selling her goods to help provide for her family or maybe she was heading home after a shopping trip…. Read More

Chile Con Queso

Chile con Queso When I was pregnant with my second child all I craved was queso.  Breakfast, lunch and dinner all my baby bump demanded was a bubbly bowl of melted cheese speckled with chiles and a handful of salty tortilla chips.  At the time we were living in Killeen, Texas where mi carino was stationed at Fort Hood and crave busting Mexican joints were scarce.   You see it’s not that I needed a great place to pick up a Plato de enchiladas or unas quesadillas de asada, I could make those in my sleep. The problem was I still hadn’t… Read More

Homemade Grapefruit Soda

Homemade Grapefruit Soda I am dangerously crushing on sweet Texas grapefruit at the moment! I’m obsessed!   My childhood summers in Mexico consisted of heavy amounts of dulces y soda. From Mexico Coke (MexiCoke) to Jarritos with their wide vast of flavors. I inhaled them. Of course I was alot younger then and my health was not on the top of my priority list. Fast forward to today. I am a wife, mother of two and cherish every day I am given on this earth. Soda has been canned.  Problem is some days I crave soda. A Bubbly, sweet potion to quench… Read More

Mexican Pizza ~ Tlayuda con Chorizo y Frijoles

Tlayuda Up until my 17 birthday I spent every summer in Mexico with my grandmother. I spent my days on her porch, trying to avoid the heat while I sipped on my soda and gazed at the busy people as they hurriedly walked to their destination. Later in the evening when the temperature dropped we would head out to Mercado or to visit familia, stopping to eat along the way.  A raspa, a roasted elote or a plate of taquitos con salsa y cilantro the street vendors had it all! And we gobbled up each and every treat along the way. One summer… Read More

Easy Brisket Enchiladas

Easy Brisket Enchiladas   My life along with my table has become a fusion of Mexico and Texas.  Two worlds that sync deliciously together with ease.  Many of the flavors of Mexico are enjoyed in Texas and here in South Texas they are considered an obsession.  During the Holiday is when the fusion of my worlds is most apparent.  My parents have come to expect a bit of spicy Mexico and a bit of sweet Texas. My holiday table is laced with tamales, brisket, pan de polvo, pecan pie, frijoles de olla and kerbey lane inspired gingerbread pancakes.  This holiday… Read More

Dulce de Leche Chocolate Chip Cookies

Dulce de Leche Chocolate Chip Cookies Mi carino has been in Waco, Texas for the last two months.  My weekends have evolved into an overdose of girl time.  There have been countless tea parties, breakfast for every meal, glam make-up sessions and way too many fruity drinks laced with colorful straws.  Have I missed mi carino? With every ounce of my heart, but we needed this, rewind truthfully I needed this. My girls are quickly growing up, blooming into little ladies and transforming right before my eyes. So when hubby announced he would be leaving us. I silently shrieked with… Read More

Café con Leche

Café con Leche I got my first job when I was 16 at our local Whataburger.  I started off taking orders, was then moved to man the drive thru and ended up behind the grill. And I stayed there, because this 16 yr old could grill a mean burger.  I used to work the 5pm-3am shift on Fridays and Saturdays.  The crowd was insane.  The hours flew by with the football game crowd, people out on dates, friends hanging out, the bar crowd and the people getting off the night shift.  These are the days I didn’t mind working….
