Pozole de Frijol

Pozole de Frijol It never fails. Every lent season I crave pozole.  Big hearty bowls overflowing with chicken or pork nestled alongside hominy and chiles in a rich broth.  With only a few more days until Easter (the end of Lenten season) the cravings begin to haunt me.  Yesterday as I began pulling together the ingredients for my weekly pot of frijoles de olla I ran across a can of hominy in my pantry. {Sigh} my beloved pozole.  As I placed my frijoles on the stove top I thought there must be a vegetarian version of pozole that I can… Read More

Mojitos

My brother is a perfectionist.   Every aspect of his life is met with a complete plan of attack. Plan. Attack. Conquer. He’s a Marine.  Enough said.  One evening I received this text. “How do you make your mojitos?” “Ummm, mint, rum sugar… why?” “I’m having a get together… I want to serve mojitos.. I’ve  tried several recipes, they all suck.” “Text me a good recipe….” I know he reads my blog…. Rum? Ah mijo… tequila is what your sis does, but really who denies a Marine information. Lucky for me I had Carrie. My lovable Tiki Tiki friend who had shared her Mojito by the pitcher… Read More

Mexican Fish Stew

Mexican Fish Stew Whew!! What a week. I spent the week packing and in my rush I lost a few of my prized kitchen items along the way.  My vegetable peeler, food processor blade and wine bottle opener are MIA!! Two of the three items can easily be replaced by my trusted knife but, the wine opener genuinely has me worried. What’s a gal to do an entire month without wine?   This kind of situation requires an all hands on deck search party, which in our house means … daddy.   Anyways… moving on.  To the food! On Thursday I got… Read More

Famous Queso Dip

Famous Queso Dip   My  VELVEETA & Ro*Tel® queso addiction began the evening my Uncle Israel walked into my 13th birthday party carrying this dip in a crockpot. I blame/love him for introducing me to this dip. When I miss my easy going 13 year old life (which lately has been often) I make this dip. Do I share? Sometimes.  Do I feel 13 again?  Yes!  Enjoy!     A quick, really quick way to get ready for movie night, midnight munchies or avoid cooking altogether.  Queso! Serve warm with plently of homemade tortillas chips and your set!!         Crave more recipes with VELVEETA & Ro*Tel®… Read More

New Latina

At the moment I am buried in boxes.  I’m moving!!  I’ll be back in the kitchen soon, but until then why not stop by New Latina and check out my latest recipe. Grapefruit soda. Confession: I have packed 74 sets of margarita glasses.  74 x 4 = 296 … I may have a slight addiction.

Arroz con Camarón Seco – Rice with Dried Shrimp

Arroz con Camarón Seco – Rice with Dried Shrimp   Nothing excites my 7 yr old daughter more than hotels and shrimp.  She loves weekend trips and even helps my husband chose the perfect place to lay her tiny head.  When we dine there had better be shrimp on the menu. Because a 7 yr old needs options: fried, with pasta, soup or how about stuffed she loves them all.   Last year when momo (grandma) presented her with a plate of rice studded with dried shrimp she was thrilled.  She gave me that look.  You know the look of please add this… Read More

Shrimp Tacos

Shrimp Tacos Easy, bright, bursting with flavor and healthy is what I crave on the weekends. Shrimp tacos are one of the easiest meals I have in my arsenal for lazy weekends. Weekends should be lazy, breezy and delish don’t you think?  A quick marinade and even quicker relish are prepped. Sauté your shrimp, warm a stack of tortillas and your set. Top with relish and enjoy!

Avocado Fries

Avocado Fries My little sister and I have a ritual.  Our me time.  To unwind, distress and take a break from our kids.  She visits me every two weeks and we plan our little escape.  Midnight movies.   Have you been to the movies at midnight? Well, here in Edinburg, Texas it’s pretty empty (very) and that’s how we like it, because 99% of the time we watch girlie flicks. You know the kind your hubby would not be caught dead in, only when you were dating kind of movie.  Yeah those, we love them!  The sweet bonus of a midnight viewing is… Read More
