Easy Mexican Style Eggs

  Welcome to the third week of the H-E-B–ConAgra Back to School Meal Maker Challenge. The Back to School Meal Maker Challenge os where 7 Texas bloggers offer quick and easy time meal solutions.  Each meal will have less than 10 ingredients, take less than 45 minutes to make and feed a family of four. Each week there will be a featured ingredient where each blogger will incorporate into their recipe.  This week we work with Egg Beaters  Who doesn’t love eggs for breakfast, lunch or dinner?

Pineapple Margarita

Happy Friday!! Pineapple Margarita I have wanted to learn to can and took the opportunity to purchase jars in various sizes for Summer Fest.   Since that recipe I haven’t canned , but I have used the jars. For margaritas.  It’s an addiction what can I say? In late May I posted a margarita recipe for pineapple/cucumber which was adapted from my favorite agua fresca.  This week I craved a crisp pineapple flavor dotted with a speck of lime. Tequila Blanco is ideal for summer margaritas.  A Blanco has a clean taste giving your fresh fruit juice center stage. 

Steel Cut Overnight Oats

This recipe is my first contribution  for New Latina.  As a contributor I will share quick, easy meals.      Overnight oats provide you a healthy start to the morning with the flexibility of enjoying a new flavor combination every morning.  Steel cut oats are soaked overnight in the milk of your choice; whole, almond or soy. Toppings are limitless.  Try nuts, seeds, dried or fresh fruit or butters such as peanut, almond, cashew or hazelnut.  Drizzle with agave or honey.  Enjoy either cold or warm.  Cherries Cherries Cherries Cherries are the spotlight for this edition of Summer Fest .   Ruby jewels bursting with the flavor of summer.  I love them enough to give canning a whirl!! I’ve always wanted to learn to can.  To be able to capture the flavor of summer  and enjoy those flavors in the mundane months of winter is something I have longed for. Watermelon Cucumber Margarita

Sipping Saturday   Happy Weekend! It’s been extremely hot, humid and just plain sticky in the Rio Grande Valley. Keeping hydrated at all times is the key in surviving our current weather. Last week I shared one of my go-to aguas to help beat the summer heat.  Agua de pepino That day I made a huge pitcher and sipped the heat away. Later in the evening as I enjoyed a movie with my hubby I drizzled in a bit of tequila to my agua de pepino. Remarkable! I knew I was on to something.

Tequila Lime Dressing

  At the moment I have 6 bottles of tequila in my pantry.   Six glorious bottles ready to aid in my need of a Saturday margarita.  The problem is only one has escaped my clutches. The others have dwindle down to only ounces, as a result of my Saturday margarita recipes. What’s a girl to do?
