Our summers are made bearable with frequent trips to the beach laced with heavy doses of paletas, raspas and agua frescas. My calendar officially states June 21 as the first day of summer. Try explaining this to my kids, who crave roaming the beach in search of seashells. On days that we cannot escape to the beach we cool off enjoying paletas. Paletas are super easy to make. They require little time, effort and clean up is a breeze.
Mexican Brownies
My daughter, Chuls has taken quite a shine to Aarón Sanchez. She rooted for him on The Next Iron Chef and laughs at his antics on Chef versus City. He became even cooler when she found out he was Zarela Martínez’s son. When she spotted these brownies I knew mommy was in for a treat. Did it phase her that these brownies had chili powder, nah “that’s so Aarón mom, he loves flavor.”
Honeydew Margarita
Sipping Saturday What could be more rewarding after a long week of business than to begin the weekend with a cooling margarita. Honeydew is one of the coolest melons. Don’t you think? A lime green pale rind gives way to a juicy pale interior bursting with natural sweetness. Slice, dice or chop any way you serve this melon it is sure to please. The next time you carve into a fresh honeydew, why not save a few slices and make yourself this cool margarita. Enjoy!

It’s funny when life spins into busy mode I somehow seem to get more accomplished. Is it that I plan, prepare or pray more? No. I simply refuse to have my day taken from me. I dislike the idea of being so busy, that I am deprived of “my moments.”
Mango Margarita
Sipping Saturday Today’s Margarita is inspired by the mango paletas I made last week. As I peeled my mangos to make the paletas my tiny kitchen swirled with the aroma of a tropical paradise. I knew by Saturday my body, soul and brain would be in need of little tropical getaway. What better way to soothe away a stressful week than with a Mango Margarita? Enjoy!
Brisket Dip
I have been feasting on my Memorial Day left overs for days it seems, as I somehow managed to cook for a crowd of 50, when in reality there was only us 4. A smoky brisket that hubby made for us has made my weekday meal planning very easy. One evening served as tacos, the next alongside a baked potato, movie night no problem. Brisket Dip! Enjoy!
Watermelon Margarita
Sipping Saturday This Sunday we are off to enjoy the Watermelon Festival in Donna, Texas. I considered entering the seed spitting contest, but I decided to spare my kids the unnecessary embarrassment of watching their mom make a fool out of herself. I think I’ll leave this event to the professionals. In celebration of this event I bring you watermelon margaritas! Enjoy!
