Jalapeño Cream I made a huge platter of enfrijoladas last night for Monday Night Football. Are you excited for the return of football? I’m ecstatic!! We love football!! Cucumber Salsa I first tried this salsa for the closing ceremony of the Olympics. My family joined us and we piled this salsa over a hefty plate of pinto bean nachos. Cucumbers are not my first go to ingredient when I make salsa, but I have to admit I really enjoyed the refreshing bite this salsa offered. Hatch Chile Breakfast Potatoes It’s Hatch Chile season! I adore cooking with these bright chiles and love adding them to my breakfast skillet potatoes. My girls enjoy these potatoes served with a fried egg on top and hubby loves to add even more salsa to his. I personally like to stuff them in a warm corn tortilla with finely sliced cabbage. Paletas de Piña y Arándano ~ Pineapple Blueberry Pops I spent the weekend making salsa, small batches of salsa. I get this way sometimes. I crave chile and lots and lots of heat. Paletas de Melon I’m home. I arrived this morning and I already miss my little brother in sunny California. I had the best time. Thing is… the California weather was much like Texas, minus the humidity. It was HOT!! The lady I chatted with at the local honey stand said this is the hottest it’s ever been in California, figures.
