Blackberry Margarita

It’s National Tequila Day!! Blackberry Margarita Can you tell I’m excited?  Let’s celebrate together with this bold blackberry beauty!!    Blackberries hold a very special place in this girl’s heart.   Growing up wild blackberries flooded our backyard, the next door neighbor’s yard and all along the fence of the house on the corner of our street. My mom and Mr. Lee (our next door neighbor) would spend long summer hours picking, picking, picking blackberries.   Us kids only picked enough to stash away in the freezer.  Once frozen they were plopped into a bowl with a sprinkle of sugar. Heaven in a bowl on a hot Texas summer day.  So today when the heat index climbs to a sweltering 110 degrees.  I… Read More

Agua de Pepino

Cucumbers Cucumbers Cucumbers Cucumbers are the spotlight for this edition of Summer Fest.   Cucumbers are refreshing, don’t you think?  I absolutely love having them on hand as remaining “cool as a cucumber”  during a  Texas summer is always a priority. One of my childhood favorite summer treats was thick slices of cucumber splashed with lime and sprinkled with salt.   Now as a busy mom I still crave those flavors, but need to enjoy it on the go.  So I turn to  aguas frescas (fresh waters). A to go cup brimming with a refreshing  water, makes for my day of errands a little less stressful.  Aguas are widely popular in Mexico and here in Edinburg,… Read More

Paletas de Zarzamora

My mom is in town and I am absorbing every moment with her.  We are spending alot of our time in the kitchen, but not focusing on taking pictures or writing down recipes. When I cook with my mom it’s about learning, watching her hands and connecting.  We baked together with my daughter (Chuls) and I cannot begin to express the emotion I felt. My mom’s wise hands guiding my child with loving patience as she worked her dough.  I am certain this will be one of her fondest memories as she embarks on her own culinary journey. As we move into the weekend I wanted to share a quick summer treat.  Paletas are quickly… Read More

Kiwi Margarita

Sipping Saturday Happy Saturday!!  This was “one of those weeks” that had me longing for Saturday by Tuesday afternoon.  Busy, Busy, Busy. This weekend I plan to.. unwind, take a nap, cover my girls cheeks with wet kisses, hold my hubby’s hand and sip on margaritas.  Here’s hoping your weekend is as sweet as mine.  Enjoy!

Summer Fest: Sweet Peach Ancho Chile Sauce

Peaches Peaches Peaches Peaches are the spotlight for this edition of Summer Fest  and I couldn’t be happier to share with you my Sweet Peach Ancho Sauce.   Peaches simply make life sweeter.  Sliced, diced, juiced or stewed peaches is one of many wonderful gifts summer graciously shares with us. Over the holiday weekend I tinkered in my kitchen putting the finishing touches on this sweet, thick sauce.  Drizzled warm over vanilla ice cream, served over fish or chilled ready to slather on toast. This sauce offers peaches in two textures fresh and dried.  Enhanced with the flavors of Mexico that I crave make for one sensational sauce. Enjoy!
