My love for beans is well known. I appreciate their simplicity, ease and endless supply of inspiration for quick week night meals featuring these protein packed buttons. Like clockwork every week I prepare a pot of brothy beans. As the week flies by they make their appearance at breakfast – refried with egg, lunch – a steamy bowl garnished with tomatoes, queso fresco and cilantro or dinner – tossed with rice as a side dish or as the main course with enfrijoladas. One of the many perks of living temporarily here in Edinburg, Texas is that my grandma lives only 40 minutes away in Brownsville, Texas. I try to visit her once a week, given the opportunity as I feel this is a great way for my girls’ to connect with their great grandma. Visiting her instantly takes me back to my summer’s spent at her house. This week Go Texan is celebrating the Lone Star taste of local Texan products, produce and Texas talent in a Restaurant Round Up that feature these wonderful products all to support local foods banks and officially kick of Texas Wine Month. When I received the email of this event I knew I wanted to participate. I love promoting local products from my wonderful state, but mix in the chance to meet the talent who cook this fabulous meals all while supporting their local food banks makes for a win- win evening.
