May is upon us and for many that means Cinco de Mayo! As I explained last year Cinco de Mayo celebrates the Battle of Puebla where Mexico defeated the French Army. Funny thing is Mexico doesn’t celebrate Cinco de Mayo, the day is part of their History, but not an official holiday. In our house Cinco de Mayo has become a time to honor our Mexican Heritage. I want my children to be proud of their heritage, love their history and introduce them to the people I feel have changed our world for the best.

Sipping Saturday On Monday I filled 185 plastic easter eggs with goodies. On Tuesday I taped, glued and glittered eggs, bunnies and baskets with my girls. On Wednesday I ran to the store to pick up the perfect shade of purple my daughter just had to have for her Easter basket.

A quick dinner, perfect for Lenten meals and just plain delicious frijoles adobados. Frijoles de olla refried with chipotle chiles in adobo sauce add a spicy kick to your tostadas.

Sipping Saturday On Saturday’s I enjoy sipping on a refreshing cocktail. May it be at a local Mexican restaurant with a plate of tacos or with my sister at home settling in to watch a movie. My drink of choice would have to be margaritas. A quality tequila swirled with fresh juice and a salt rimmed glass, perfection. Simply perfect for Saturday. Enjoy! Have a great weekend!
