Hominy with Cilantro and Lime
Menudo in our house is a cold weather ritual. My mom (momo) would spend hours prepping her ingredients then kept a watchful eye over her pot all night. Any of you who have made menudo know this dish can be quite time consuming. These days the work in cut in half with the tripe being sold in stores pre cut , menudo mixes are sold in the spice isles and various flavors of hominy are now available. None of these quick options were avaiable for my mom, but knowing my mom I doubt she would resort to any of these time savers. Hello my fellow food lovers, how was your weekend? My weekend was tiredly busy- in a good way. It always amazes me how I can be so busy with the girls’, cleaning, washing, picking up (the same toys), cooking only to realize that I have not left the apartment the whole week. It’s sad I know, but my carefree days of my youth are gone. So when Friday rolled around I was ready to escape anywhere and more importantly ready to be fed by a nice waitress who would in no time appear with piping warm trays of food. I have to brag I had the best entomatadas in a small family place in Pharr, Texas and drank enough agaua fresca this weekend to quench away my boring week of chores. In one week ALL my family is heading home to Aransas Pass, Texas( I am sooo excited!) to spend time together, suddenly the enormous home I grew up in, doesn’t seem to enormous. So this weekend was spent prepping for the arrival of our family. The girls needed new dresses for my nephew’s baptism, new pj’s for a breakfast bday party for their cousins and I needed a new purse and cake pans. Oh yes.. I know yall feel me…a useless cake pan can not be taken lightly..new pans must be acquired at all measures, even if I must spend hours at numerous kitchen stores (which was heaven) to find the perfect pan. Yesterday began a week of sharing my favorite recipes from Los Barrios Family Cookbook and I also had the pleasure to chat with Diana about her love of cooking and her personal time spent with family. Many of the recipes in this cookbook I found to be perfect for our busy schedules, many of the ingridients are my basic staples in my style of cooking, the preparation is uncomplicated with tasty results. I have made these chalupas numerous times since purchasing her book, for the simple fact that they make a super quick lunch, my girls enjoy them for friday movie night and they are “family friendly” which means anyone of us can put these together. Hello my loves, (what a mouthful my title post) this week I am honored to begin a showcase of Texas Talent. I hope to give you a glimpse into the lives of the Talented people who make Texas dining memorable. Let’s celebrate this event together by cooking and sharing our love of food with our first guest. This week I am excited to introduce Diana Barrios from Los Barrios Restaurant from San Antonio, Texas. Many of you know Diana from her many appearances on Good Morning America, Tasting Texas , NBC Weekend Today Show and Despierta America. Diana was also challenged by Bobby Flay in his competitive Food Network show Throwdown with Bobby Flay, the challenge their famous Puffy tacos. Los Barrios restaurant in San Antonio , Texas has been cooking up family favorite for more than twenty five years. This in itself is a great accomplishment, with countless Tex-Mex restaurants opening each year. Los Barrios has surpassed it’s competition to be named Esquire’s Top 100 New Resturaunts in America, placing Los Barrios into one of The Lone Star State’s top food destination. The family has also expanded with a new restaurant called La Hacienda giving Texas residents and visitors the chance to taste their family’s widely praised dishes. What began as a way for Mama Viola to help her family survive the mounting financial hardship with the passing of her beloved husband, in a small garage has grown into a family business that with hard work and dedication has helped the family succeed in all aspects of life. Chocolate Tres Leches Cake — Celebrating My first Year (giveaway!!)
Today Sweet Life proudly celebrates it’s first year. I am over the moon thrilled at the completion of my first year, in being boldly honest I never thought I would make it this far. I humbly admit I am horribly the most unorganized person and often find myself completing 3-4 task at the same time (at this moment I am typing this post, sorting laundry, finishing the cake, paying bills and loading my dishwasher) if not for my the continuous stream of coffee coursing through my veins I fear I would never complete half the daily task I begin. I also must confess I can spell, yes I am a able adult who in fact can put letters together and form sentences. I put this out for all of you to forgive my awful spelling in your comment boxes and this……what’s up with that? I seem to always ……..every five minutes.
